Dining Among The Divots: A Taste of Twilight
The 37th Annual Palamountain Cup, “Polo By Twilight”, is scheduled for Tuesday, July 26th. This annual fundraiser to benefit The Palamountain Scholarship Fund at Skidmore College is one of the premiere social events of the season and I was fortunate enough to get a sampling of the fare that will be offered to guests at this year’s event.
Executive Chef, Jim Rose, has been Skidmore’s Executive Chef since 2006, and says he likes the committee to get a little preview of the evening’s offerings. This enables him to tweak the dishes as needed, although, from what I tasted, minimal tweaking is required!
We began with portions of Pan Fried Crab Cakes, served atop a micro “Cobb” Salad, and adorned with a House made Buttermilk Ranch dressing. The balance of the rich crabmeat was complemented by the acidity of the greens and the dressing provided a nice creamy counterpoint. Grilled Eggplant Roulades, stuffed with Quinoa and Golden Raisin Tabbouleh and adorned with a Lemon Mint Vinaigrette was just one of the vegan and gluten free options that will be available the evening of the event. Chef Rose explained that he intends to expand this type of offering, as attention to diet and allergies, is an increasing concern for any event and any menu. My favorite bite was an Applewood Smoked Skidmore Chicken Salad, served in lettuce cups, and just lightly dressed up in Maple Tarragon Dressing. Perfect bits of crunch in the salad, and a marvelous choice for an evening that is almost certain to be warm.
The evening’s menu will also consist of “The Skidmore Steakhouse”; a carving station that will feature Garlic-Herb Encrusted Beef tenderloin with a Spanish Romesco. Pasta lovers need not miss out, as an Artisan Cheese Ravioli with a Smokey Tomato Ragu will be available. Along with an Antipasto Display, a Local Charcuterie Display, a Raw Bar, and numerous additional stations, those attending this event certainly will not leave hungry.
However, my suggestion is to make certain you leave ample room for dessert! The sweet samples presented to us were delicious; the presentation beautiful with just a touch of whimsy. Chocolate Tulip Cups, filled with Hazelnut Ganache and Cappuccino Mousse were creamy and appropriately decadent. Fresh Fruit Tartlets fairly screamed of summer, the berries like little jewels perched on a creamy throne. Again, if forced to choose a favorite, the Summer Peach Berry Cobbler wins the chukker. I am a sucker for self-contained desserts and this was served in a miniature Mason Jar. Perfect portion size perfectly executed. Blueberry Muffin lovers…this dessert is for you.
