For starters, they only make 20 a night because of how long it takes to prepare the naturally leavened sourdough crust (3 days!). That is Duxelle inspired pizza which is described by the farm as " Duxelles is a classic French mushroom puree made with minced mushrooms and shallots or onions cooked down to intensify flavor. It's usually used for fancy purposes (such as Beef Wellington) but we're putting the potent spread on pizza. It works great with a smooth, soft layer of Vermont mascarpone and ricotta."
